• Buckwheat pancakes with pea paste, marjoram caviar and lemon gel
• Herring tartare with dried cranberries, red onion and pickled cucumber
• Pink roast beef with fig mousse, rocket and saffron pear
• Filo pastry cones with mushroom and truffle filling
• Christmas pâté with cranberry glacage
• Roasted cod mousse with red pepper and pickled daikon radish, served with Parmesan crisps on wholemeal toast
